How to make the “Plant-Based Mayor’s Breakfast Wrap" Mayor-elect Eric Adams ate on his victory day


Eric Adams, New York City’s Mayor-elect, had a special victory meal the morning of his win: a plant-based breakfast wrap.


Adams, who will officially become the 110th mayor of New York City on January 1, 2022, will be the second-ever Black mayor of NYC, and the first-ever plant-based person to hold office.


On election day, November 3, 2021, Adams grabbed a vegan bite at a Brooklyn-based market in his home borough—he chowed down on the special edition wrap dubbed the “Plant-Based Mayor’s Breakfast Wrap,” as he spoke with New Yorker's passing by on the street. The wrap was created by Plantega, a company that partners with markets to provide and promote plant-based food options. The Plant-Based Mayor’s Breakfast Wrap was created to represent Adams' dedication to restoring New Yorkers’ health through better food choices.

After adopting a plant-based diet, I was able to reverse my type 2 diabetes, which changed not only the trajectory of my life, but also my career as a public servant. I am now committed to spreading that message and empowering New Yorkers in every zip code to lead a healthy lifestyle.” - Mayor-Elect Eric Adams.

While the wrap is available at Marinello’s Gourmet Deli and Silver Moon Deli in NYC for a limited time, if you're not in NYC, this is actually a super easy wrap you can make yourself—and I show you exactly how below.


Plant-Based Mayor’s Breakfast Wrap:

Ingredients:
  • *2 JUST Egg Folded squares

  • A handful of spinach

  • A few thin slices of red onion

  • 2 tomato slices

  • ¼ avocado

  • **3 TBSPs LOCA Potato Queso (or vegan queso of choice)

  • 1 tortilla or flatbread (toasted or warmed)


*You can find JUST Egg Folded at most grocery stores, typically found in the frozen food section. Alternatively, you can buy the liquid JUST Egg, often found in the real egg section, or vegan/plant-based section, and scramble it up for the wrap. A final option is to use firm tofu mixed with nutritional yeast to make an egg-like product.

**The official wrap uses LOCA Foods’ potato-based queso which you can buy on their website, and other select retailers. Alternatively, you can use your preferred vegan queso or cheese ... or just go cheeseless.


Instructions:
  • Pan-fry, or toast, your two JUST Egg Folded squares. (After cooked, you can slice or chop into a few large pieces to prep for inserting in the wrap.)

  • Assemble your spinach, red onion, tomato and avocado on your tortilla.

  • Add your LOCA (or alternative) vegan queso.

  • Top with your JUST Folded Egg squares/slices.

  • Wrap up and enjoy!
